Black Cod/Sablefish
Black Cod is long-lined like halibut in the deep cold waters of the Bering Sea
and Gulf of Alaska where the world’s largest populations exist. It is normally
sold dressed with the head off and individually frozen. Thanks to its rich oil
content, black cod is exceptionally flavorful and an excellent fish for
smoking. The harvesting season is coincidental with halibut starting in early
March and ending in mid November. Icicle Seafoods is one of the largest buyers
and processors of this oily rich fish that is prized in Asian markets and
upscale restaurants in the US.
